Tofu katsu, a perfectly crisp outer layer with gooey✨ cheese inside. Sandwiched it between 2 slices of soft bread and crunchy veggies is a perfect meal with ketchup or mustard, YUM !

Ingredients:
➤ bread of your choice
➤ 1 pack of firm tofu, drained well and pat dry
➤ 2 slices of vegan cheese
➤ oil for frying
➤ salt & black pepper to taste

👉Batter: Separate these ingredients using different plates
➤ 1/3 cup rice flour/all purpose flour
➤ chickpea water/aquafaba from 1 can of chickpea (~16oz)
➤ panko crumbs, Japanese style with a little water

Recipe:(2 servings)
✔️Slice tofu horizontally, so you get two blocks, season with salt and black pepper (don't miss this step). Then, cut each half again horizontally but don't cut all the way, leaving some space to hold the cheese. Slide cheese in between. Do the same for the other half.
✔️Dredge tofu in flour, pat to remove excess flour, then chickpea water (be sure all sides are coated), finally pack all sides in wet panko crumbs.
I did a shallow pan fry in med heat, where oil covers half of the tofu. Katsu is ready when all sides are golden brown. Place fried katsu on paper towel to absorb excess oil.
Assemble sandwich to your preference and enjoy. Have a lovely day, everyone.
